Swell Oyster cocktail oysters (2.5 – 3″) are started in suspended gear for rapid growth in warm, plankton-rich water, then moved to open-top cages and regularly tumbled to develop a deep cup. They have a well-balanced, clean brine with a hint of chicken stock and a sweet, clean finish.
